Summertime Avocado Dip, With Alyssa Shrum

Hey y’all! I’m Alyssa and I am the creator of the food and wellness website, alyssashrum.com. I am SO, SO excited to have the opportunity to guest post for Alex today. She has been a huge inspiration to me in the world of blogging, and fashion (clearly!) and I am so honored she asked me to collaborate with her! A little background on me. I have a huge passion for food and healthy living and a couple years ago I decided to put those passions to good use by becoming a Certified Health Coach! I studied at the Institute of Integrative Nutrition where I learned over 100 different dietary theories and studied under some of the top experts in the field. As a Health Coach, I do just what the name implies. I am a guide, or coach, to leading my clients into a lifestyle of healthy living by making small, consistent changes over several months’ time and helping them figure out what works and what doesn’t to get them where they want to be. I help my clients get to where they want to be by being a voice of encouragement and guidance but they ultimately do the work, empowering them to continue making those lifestyle choices after our sessions have ended. Summertime Avocado Dip

Summer in the South is officially here. Ok well not technically. But, when I start sweating just walking out to my car and my hair is impossible to keep straight, its official in my book. I love Summer: the fashion, the food, the lake, the trips, the beach, having a tan. I could go on and on. And I don’t know about y’all but I start craving really fresh foods when it’s so hot out! One of my absolute favorite summer cookout foods of all time are chips and dip. I loooooveeeee almost any type of chip and dip you put in front of me: spicy, cheesy, salsa, meat, no meat, and sweet, salty- they’re all good in my book. Ya know what else I like? AVOCADO. Which seems to be all the rage right now. And for good reason! I try to have it every day. Literally. I even use it as a face-mask. It is so, SO good for you in so many ways and it’s one of the freshest tasting foods you can eat in my opinion-perfect for summer. SO why not combine the two?!

Thus, this avocado dip was born. Truth be told, it’s actually been around for a while. This is one of mine and my best friend’s favorite dips. We’ve had it for years. It’s tried and true. Perfect for summer. Fresh, light and extremely quick and easy to make and most importantly, it’s healthy AND bursting with a ton of flavor! This is my go-to for when people are coming over for a cookout or when I’m looking for something to take to someone’s house. And I always get compliments on how good it is-I promise you can’t go wrong with it!

As with all of my recipes, quality is always the most important thing! Use organic avocados, tomatoes, and feta if you can find it and high quality EVOO. It’ll make a huge difference in the taste as well. Pair it with Pita chips (Costco has big bags of Stacy’s organic pita chips that are my favorite!) or with cucumbers or carrots for a lighter option. What you need:

4 ripe avocados

3-4 roma tomatoes, depending on size (I like the ratio of avo and tomato to be mostly even)

4 oz or one package of feta cheese

2 tablespoons Extra Virgin Olive Oil, or more to taste

salt, to taste

garlic powder, to taste

What to do:

Cut avocados in cubes and chop tomatoes, add to a bowl

Add the rest of the ingredients and mix everything well, trying your best to leave the avocados in cubes and not pureeing it

Let sit in the fridge for an hour or so to chill before serving
